Loaded Baked Potato with a Twist.

This recipe is a fun twist on the classic comfort food -- a loaded baked potato. It is brought to you via one of my favorite cooking blogs, Sprouted Kitchen, a blog I find myself following more for its mouth watering photography than recipes, but sometimes the two combine into a force to contend with.

Meet baked sweet potatoes with chili beans.

Ingredients:

Medium sweet potato
Medium sweet white onion
1 tsp olive oil
One large beefsteak tomato (or canned whole tomatoes in juices, if no longer in season)
Two cloves garlic
Pinch of salt
Duck bacon (optional)
1 whole chipotle pepper in adobo sauce (from can)
One 20 oz can pinto beans
1/2 tsp cumin
2 tsp honey or nectar agave
1/4 tsp cinnamon
1/2 tsp paprika
Twist fresh ground black pepper

Chopped fresh cilantro
Chopped green onions
Sour cream or greek style plain yogurt (whole or 2%)

1. Preheat the oven to 400. Pierce holes in the sweet potatoes/yams with a fork, lightly wrap them in foil, and bake on the middle rack for about 45-55 minutes until soft.

2. Cut onion in half and thinly slice into half moon shapes. Pour olive oil into skillet on medium heat, heat gently, add onions and saute until slightly wilted. Cut tomato into thin wedges and add to pan. Add chopped garlic cloves and a pinch of salt.

3. I happened to have some duck bacon on hand (highly recommended!) so I decided to add 3 pre-cooked slices (cut into smaller than bite size pieces) to add depth and robustness to the flavor of the dish. Regular bacon could do the trick, but be careful with respect to adding any additional salt as most store bought bacon tends to be very high in salt content.

4. Dice the chipotle pepper into smaller than bite size pieces and add additional liquids from the can into the onion/tomato mixture as desired according to ability to tolerate heat. I spooned the pinto beans into the pan with a slotted spoon reserving the extra liquid in the can for adding into the pan one spoonful at a time, depending on taste, desired texture, and need to dilute some of the heat from the chipotle pepper.

5. Add the cumin, honey/nectar agave, cinnamon, paprika, and black pepper to taste.

6. Bring mixture to a simmer and reduce heat for an additional 20 minutes cooking time while the flavors combine. Continue to add liquid from the pinto beans to taste and desired level of spiciness.

7. As the sweet potatoes finish, remove from oven and let cool for ~10 minutes. Slice in 1/2 and create a little cavern down the middle. Fill the potato with the pinto bean mixture and add desired toppings. The sour cream/yogurt is a refreshing and cooling contrast to the spice of the pinto bean mixture, while the fresh cilantro and the diced green onions provide a nice, crisp contrast to the sweet potatoes.

Enjoy!

On a More Positive Note.

As found on Catalogue Living blog.

Gary! One of the dog plates is getting frisky. I told you we should have had them fixed.

Weekly Whiteout.

One of the blogs I follow on a regular basis has a weekly whiteout feature.

In Capetown, we stumbled upon our own version of weekly whiteout:
Oh, and by the way, our long standing punch buggy game was not only officially back on during our trip, but back with an nearly lethal vengeance. This game more than once almost lead to our own version of weekly wipe out.

Overheard at the Coffee Shop.

I am stupider for having heard this conversation between Girl #1 and Girl #2, and you too will be stupider for reading it - consider yourself forewarned.

Girl #1: you are SUCH a good wriiiiiiter.
Girl #2: [uncomfortably loud laughter] I just reaaaaalllly like a gooood story.
Girl #1: I mean, you should write a book.
Girl #2: I like looking at the blogs that are out there, there are just so many good stories, and pictures. I mean everybody loves pictures.
Girl #2: We should team up and write a book. Not that I think I could get published or anything. But thats how people get discovered - blogs!
Girl #1: I know a girl who is a writer.
Girl #2: What does she write about?
Girl #1: Its just amazing. and stuff.
Girl #2: I want to be a writer. It just takes so MUCH time. I dont know. It just takes so much time to do what you want to do and to do it well. It just needs to happen in an organic way, rather than being the center of my life.

[Both suddenly look busy, sip coffee (sugar and milk free) twirl their hair to fill the awkward silence.]

Girl #2: I mean, you dont even have to go to school for this stuff, you just have to have passion.
Girl #1: yea, passion...
Girl #2: I mean you dont even have to write anything, you know, like the Sartorialist guy, he is really famous and stuff, and he doesnt even write that much, you dont even have to write much, its just like street style, with a creative license. you could be famous.

note to self: need. to. get. out. of here.

He said, She said.

As most of you are well aware by this point, my interest in home design and fashion borders on the verge of obsession. I have found a great outlet to explore these interests in the form of blogs, especially as conversations with the less than interested husband often leave me wanting. When Andrei and I fail to see eye to eye on matters of fashion and home design, I find that his perspective and opinions are often truly hilarious, even when he fails to see that my opinion is of course, the "right" one. Alas, I did not marry a gay man...

It seems I am not alone in this aspect of "marital bliss," Alison of My Little Happy Place has a hilarious feature, called "He said, She said." As you may guess from the title, basically she shares home design images with her husband and records their respective reactions to each image. I encourage you to check it out, well worth a few laughs. But I digress...

Recently Andrei picked up an issue of Elle he found lying around our bedroom. Casually flipping through the pages he stumbled across this Chanel ad, and so began our version of "He said, She said."
Andrei: Beautiful.
Matty: er, um...
Andrei: These images are going straight onto the man repeller.
Matty: Yea, seriously, I just dont get it.

And so it seems, Andrei and I have agreed on one thing, the Chanel Fall 2010 collection is simply atrocious, or maybe to be fair, we simply just do not get the appeal of fur covered everything living in the tropics. In the ultimate ironic twist of fate, images from this collection have made their way into the header of the man repeller blog.

For the record, this does not mean that I no longer covet the fabulous $3000 white quilt Chanel purse. Its a classic. Yes, I am living as an unpaid student intern in one of the poorest countries of the world and longing for a $3000 purse. And so it goes...
